Strawberry Mango Pepper Salsa

Ingredients

  • 1 pound strawberries, fresh, hulled and chopped
  • 1 mango, fresh, peeled and chopped
  • ¼ cup red onion, diced
  • 1 jalapeno pepper, seeds and ribs removed, diced
  • 2 tablespoons cilantro, chopped
  • 2 teaspoons honey
  • 1 juice of one lime
  • 1 pinch of salt

Instructions

  1. In a medium bowl, toss together the strawberries, mango, jalapeno, red onion and cilantro.
  2. In a small bowl or measuring cup, whisk together the honey, lime juice and salt.
  3. Pour the honey mixture over the strawberry mixture and toss to coat. Refrigerate for thirty minutes to let the flavors blend together

Pomegranate Pear Salsa

Ingredients

  • 1 Ripe Medium Mango
  • 1 Small Red Onion
  • 2 Pears
  • 1 Large Pomegranate, seeds only
  • Honey, to taste
  • 1 Small Lemon, juice only
  • Salt, to taste

Instructions

  1. 1. Finely chop the mango, onion, pears and cilantro. Deseed the pomegranate. Transfer all these ingredients into a mixing bowl and mix.
  2. Add honey, freshly squeezed lemon juice, a pinch of salt and pepper and thinly sliced fresh chili (if using). Give everything a good mix.
  3. Taste and add more seasoning if needed.
