Soft, fluffy stuffed rolls are simple to make and perfect to serve alongside any meal.

Easy Sausage Rolls

Prep time: 20 Minutes
Cook Time: 40 Minutes

INGREDIENTS

  • 1 tbsp olive oil
  • 2 red onions, halved, thinly sliced
  • 1 ½ tbsp brown sugar
  • 2 sheets frozen ready-rolled puff pastry, partially thawed
  • 1 egg, lightly beaten
  • 8 thick beef/pork sausages

INSTRUCTIONS

  1. Preheat oven to 200°C. Line a baking tray with baking paper. Heat oil in a non-stick frying pan over medium-high heat. Add onions and cook, stirring often, for 10 minutes or until tender. Add sugar. Cook, stir until caramelized. Set aside for 5 minutes to cool slightly.
  2. Cut each pastry sheet into 4 squares, brush 1 edge with egg. Spread 1 tablespoon onion mixture over pastry add sausage. Roll up pastry to enclose sausage, with egg-brushed edge on top. Press to secure. Place, seam side down, on tray. Repeat with remaining pastry, egg, onion mixture and sausages.
  3. Bake for 25 minutes or until sausages are cooked through and pastry is golden. Enjoy!

Spinach Rolls with Puff Pastry

A vegetarian version of mini sausage rolls but made with a spinach and feta filling.

INGREDIENTS

  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced, or more to taste
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • Salt to taste
  • 1 (4 ounce) package crumbled feta cheese
  • 3 sheets frozen puff pastry, thawed
  • 1 egg, beaten
  • 1 tablespoon milk
  • 2 tablespoons sesame seeds

INSTRUCTIONS

  1. Heat oil in a skillet over medium heat and cook garlic until fragrant, 1 to 2 minutes. Stir in spinach and cook until warmed through, 3 to 5 minutes; season with salt and mix well. Transfer to a bowl and mix in feta cheese.
  2. Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets.
  3. Lay 1 sheet of puff pastry on a lightly floured surface and cut in half lengthwise. Roll 1 half out with a rolling pin so it is wide enough to fold twice lengthwise. Mix egg and milk together in a small bowl.
  4. Spread ⅙ of the spinach mixture lengthwise in the center of the puff pastry. Roll one side over the filling and brush the other side with egg-milk mixture. Roll over again to seal.
  5. Brush top of roll with egg-milk mixture and sprinkle with sesame seeds. Cut roll into 6 small rolls. Repeat with the remaining puff pastry. Place cut rolls onto the prepared baking sheets.
  6. Bake in the preheated oven until spinach rolls are puffed up and golden, 20 to 25 minutes.
